Healthy (Tesco) Legume Salad !

No can refuse this wonderful and  healthy salad loaded with veggies, legumes , greens etc. It is so delicious and so filling. If you ever had a chance to visit the Tesco salad bar then do not miss to try this salad. When we roam around with kids or take the to parks, this tesco salad bar is the destination for lunch or  hunger pangs.
Long time I tried to replicate this salad at home and analysed the ingredients in it. And one day I landed on this PAGE I quickly tried to gather all the ingredients and had this salad for dinner.
I ponder about the choice of ingredients used with respect to their colors may be, contrasting each other making it very inviting and appealing with red and orange , blacks and greens.
Though I haven't roasted the squash , next time I will definitely take extra time to do it.

  • 1/3 cup Chickpeas (pressure cooked / tinned)
  • 1/4 cup Black Turtle Beans (pressure cooked or tinned)
  • 1/4 cup Green Peas ( Fresh or Frozen)
  • 1/4 cup Edamame beans (fresh)
  • 1 cup Butternut Squash (cubed)
  • 1/4 cup red bell pepper (finely chopped)
  • 1/4 cup Spinach and Parsley (finely chopped)
For the Dressing (Vinaigrette)
  • 3 tbsp  Extra Virgin Olive Oil
  • salt as needed
  • 1/2 tsp Crushed Black Pepper
  • a pinch of chilli flakes (optional)
  • 1 garlic clove (minced) (optional)
  • 1/2 lemon
  • Soak the dry chickpeas and black turtle beans (separately) overnight.
  • Pressure cook them (separately) until they are cooked soft
  • Drizzle some oil in a pan and saute the edamame and peas for 4 to 5 minutes until they are cooked.
  • Combine all these four in a big bowl.

  •  Add the finely chopped red bell pepper,  parsley and spinach to this,
  • Microwave the cubed squash pieces for 5 - 7 minutes until they are cooked soft and combine with the other ingredients in the bowl.
  • Prepare the vinaigrette by simple combining all the ingredients mentioned for the dressing and add to the salad.
  • Toss really well and serve.


  • I soak dry chickpeas and turtle beans and pressure cook them. You can also use the tinned ones which can be used instantly.
  • I prefer soaking and pressure cooking them separately as the turtle beans cooks little faster than the chickpeas and also leaves the black hue to other beans soaked with it.
  • The squash is roasted with rapeseed oil by tesco and added to the salads. You can roast them with Olive oil or any other oil and hen add to the salad. Roasted squash is truly delicious. As I didn't have time I just microwaved them and added it.
  • If you cant really make a vinaigrette, just drizzle olive oil on the salad, sprinkle salt and pepper and enjoy. The tesco salad has some broccoli florets too which I skipped. 
  • And yes there is no hard and fast rule for the choice of the ingredients, you can use any other veggies or legumes in it.
