Mixed Vegetable Khichdi !



Feeling tired or no mood to cook? Then this is the recipe for the day.. Mixed Veg Khichdi..Very healthy and nutritious and an awesome one pot meal. Is it so very simple but delicious served hot with ghee. This rice lentil and veg based recipe is very popular in Northern India and its really a comfort food on busy days. 


INGREDIENTS (No Onion No Garlic)
  • 1 cup rice
  • 1/4 cup Toor Dal
  • 1/4 cup Moong Dal
  • 2 cups Vegetables (Carrot, Peas, Potato, Beans, Squash etc)
  • 1 Tomato
  • 1 tbsp Ghee
  • 1 tsp Mustard Seeds
  • 3 Cloves
  • 1 tsp Jeera (cumin Seeds)
  • 1 Green Chilli (chopped )
  • 1 piece Ginger (chopped)
  • a pinch of Asafoedita
  • salt as needed
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 2 tbsp Coriander (finely chopped)
  • 4 to 4 1/2 cups water

STEPS
  • In a pressure cooker, heat ghee and once it melts add Mustard seeds , cloves and Cumin Seeds.
  • Once they splutter and jeera turns brown add chilli and ginger and saute.
  • Then add all the vegetables  (except Peas) and saute in ghee for 2 - 3 minutes.
  • Now add in tomatoes and again saute for a minute.


  •  Wash the rice and dal and add to the veggis.
  • Add water , the spice powders and salt and give a mix.
  •  Lastly add green peas and coriander and pressure cook for 3 whistles.
  • Let the pressure release on its own and the open cooker.
  • Add some ghee , give a mix and serve super hot with some pickle or papad. !
NOTES

  • Khichdi is best served hot with a spoon of ghee on top.
  • Vegetables added are of your choice. But most commonly carrot, beans , potatoes and peas are added.
  • I made it No Onion No Garlic, feel free to include them.
  • Serve with papad and pickle and a healthy wholesome meal is ready .
  • Khichdi is not very dry like pulaos  and it is a little mushy so a little more water can be added while cooking.
  • I used a mix of Toor Dal and Moong Dal, but can be prepared only with Moong Dal too.
