Tawa Pulao !

Tawa pulao aka pav bhaji Pulao is a famous street esp from Mumbai where the vendors make this delicious spicy rice dish in the same tawa where they make the pav bhaji.  It has the flavor similar to pav bhaji and tastes so delicious. You can either make it with hot rice or even left over rice.
I used to watch so curiously how they make this in our office canteens where they use a big tava and ladle and add in lots of butter and pav bhaji masala. I make it in a big pan  at home as making it in a dosa tawa is bit difficult. 

  • 2 1/2 cups boiled long grain or Basmati Rice
  • big bowl of chopped vegetables (Potato, carrot, cauli flower, peas, beans)
  • 7 to 8 Mushrooms (optional)
  • 2 tbsp oil  or Butter
  • 2 or 3 Cloves
  • 1 tsp Jeera
  • a pinch of Hing
  • 1 medium onion
  • 1/2 Green Capsicum
  • 1 tbsp Ginger Garlic Paste
  • 1 Chilli (finely chopped)
  • 2 - 3 Tomatoes (finely chopped)
  • 1/2 tsp Turmeric Powder
  • 1 tsp Chilli Powder
  • 2 tbsp Pav Bhaji Masala
  • 1 tsp Garam Masala
  • Salt as needed
  • 1/2 Lemon
  • coriander to garnish
  • 1 tbsp Butter

  • Take chopped potatoes, beans and carrots first in a microwave safe bowl and add water to cover the vegetables. Microwave high for 4 - 5 minutes.
  • Then add cauliflower and peas to it and again microwave for 3 - 4 minutes.
  • Your veggies will be cooked but still firm and can be added to the masala and it reduces cooking time later.

  • In a big pan (or tawa preferably), add oil or butter and once hot add Jeera, cloves and hing.
  • Then after few seconds add onion and chilli and saute well.
  • Add in the ginger garlic paste and saute everything well till onion is slightly brown

  • Add in the chopped tomatoes and cook till tomatoes are soft.
  • Add turmeric, salt , chilli powder and cook well till tomatoes are mushy and forms a nice masala.

  • Now add sliced mushrooms and capsicum and  some chopped coriander and mix everything well and allow the mushrooms and capsicum to get cooked.
  • They cook really fast , so should not take more then 5 minutes.
  • Now add pav bhaji masala and garam masala and stir.

  • The mushrooms will leave water and it should be enough for the masala gravy. But if you feel its dry you can add some water. 
  • Add the cooked vegetables and Mix everything well on high heat and let the vegetables blend well with the masala and absorb all flavors.
  • When most of the water is gone and masala is semi dry, add rice and mix carefuuly without breaking the rice.
  • Turn off stove, Squeeze in lemon juice, add coriander and a tbsp of butter and mix well.
  • The vegetables are your choice, you can skip mushroom if you dont want to.
  • Instead of microwaving, you can also boil them in water, or add raw veggies to the masala after adding tomatoes and close and cook til they are done. But it takes time.
  • You can also include paneer in this, in that case add paneer when you add cooked veggies.
  • Adjust spice powders as per taste if my quantities seem more for you, we like it spicy :)
  • Do not skip lemon juice and butter as it they enhances the taste and brings the flavor of pav bhaji.
  • I add loads of veggies generally, you can reduce them too.
  • You can make this with leftover rice too.
  • Pav bhaji masala is the main ingredient , so dont skip it. I havent tried making it at home yet , when i do i will post it.
  • Serve with onion raita or any raita of your choice.
