Spaghetti Al Pomodoro !


Spaghetti al Pomodoro is a very very simple pasta dish that can made in less than 10 minutes if you have boiled pasta ready. Italian dishes are known for being simple yet delicious with wonderful flavors and this is definitely one such dish. 
In Italian Pomodoro means Tomato, and as the name says its just tomato and its a very light and quick dish.

 INGREDIENTS (Serves 1)

  • 75 gms spaghetti (or any other shaped pasta)
  • 175 - 200 gms Cherry Tomatoes (Or normal 3 tomatoes)
  • 2 tbsp Extra Virgin Olive Oil
  • 2 Garlic cloves
  • 10 Basil Leaves
  • salt as needed
  • a pinch of black pepper
  • a pinch of sugar
  • 1/2 tsp Dried Oregano
  • 1 tbsp grated Parmesan

STEPS

  • Boil the spaghetti in lots of water with salt and some olive oil until aldente (soft but firm).
  • Drain the water and keep aside until needed.
  • Heat olive oil in a pan and add minced garlic.


  •  When garlic starts sweating, add chopped cherry tomatoes and allow them to become soft.
  • Then add torn basil leaves and sprinkle some salt.


  •  Add pepper. sugar and oregano and when the tomatoes are cooked well, add boiled spaghetti.
  • Toss the pasta well in the sauce and lastly add the grated parmesan (reserving some to garnish later).

NOTES

  • Can use normal tomatoes chopped finely if no access to cherry tomatoes.
  • Or use the tomato pulp available in tins, it gives nice red color but I wouldnt recommend it.
  • Can add some chilli flakes if you wish.
  • Serve with some grated Parmesan on top.
