Simple Potato Fry !


Sometimes when you are not in a mood to cook and want something quick yet a satisfying meal, then our option is Hot rice with tomato rasam and this simple potato Fry. Any South Indian will be more than happy with this awesome combo. We do make this combo often and especially  when Vj is not well he wants only rasam rice with this potato fry,
It is so simple with very basic ingredients and the potatoes cooked to perfection that they arre slightly crisp outside but melts in the mouth softness from inside. It goes well with rotis and an incredible pair with curd rice.


INGREDIENTS
  • 3 Medium Potatoes
  • 1 1/2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Jeera
  • a pinch of Hing
  • 2 tsp Urad Dal
  • salt as needed
  • 1 tsp Sambar Powder
  • 1/2 tsp Chilli Powder
  • 1/4 tsp Turmeic Powder
  • 1 tbsp Paruppu Podi (Idli Milagai Podi / Dal n Chilli Powder) (Optional)
STEPS
  •  Peel, wash and chop the potatoes into small equal chunks.
  • Heat oil in a pan and add mustard seeds followed by Jeera and hing and Urad Dal.
  • When Dal turns slightly brown, add the potatoes and saute well in oil for 4 - 5 minutes. 
  • The potatoes start changing slightly transparent and then add in all the spice powders and salt  (except paruppu podi) and give a mix.


  • Sprinkle some water (1/4 cup) and close the pan and keep flame in medium and allow to cook for 5 - 7 minutes.
  • The potatoes should be cooked well and soft now if you try mashing them.
  • Now add the spoonful of parupu podi and mix well.


  • On high flame keep frying the potatoes till they become slightly crisp on the outside. 
  • Turn off stove and sprinkle chopped coriander and serve.

 NOTES

  • Chop Potatoes into small pieces so that it gets cooked faster.
  • Parupu podi is purely optional, we use homemade podi that is ground coarsely.. so it gives a nice texture to the potatoes.
