Egg Fried Rice !

Egg Fried Rice is one popular Indo Chinese recipe that is available in all nook and corners of the country from street shops to restaurants. This is not a pure Chinese recipe , it is Indian way of cooking Chinese and taste like what we get in Indian restaurants n fast foods. 
Authentic Chinese Fried Rice calls for lot of Soy sauce and the dish looks more of brown in color.
So If you want this same recipe to be purely Chinese, then add some Dark Soy sauce, Oyster Sauce and more sesame oil and skip any Chilli sauce or tomato sauce if you are adding.

  • 1 cup boiled long grain rice (or any rice)
  • 1/2 cup finely chopped veggies (Carrot, beans, Capsicum, peas)
  • 1 medium onion (optional)
  • 2 -3 tbsp Spring onions (White part)
  • 2 - 3 tbsp Spring Onions (Green Part)
  • 2 Garlic Cloves
  • 2 tbsp Oil (Any Oil)
  • 2 Eggs
  • 1 tsp White Pepper Powder
  • salt as needed
  • 1 tsp Light Soy sauce
  • 1 tsp Sesame Oil  (To garnish at last)
  • salt as needed

  • Chop all the veggies very finely.
  • Heat oil in a pan and add minced Garlic and when it sweats add the white part of Spring Onions and saute for a minute.

  • Then add all the veggies and saute in hig flame for 2 - 3 minutes.
  • Push the veggies to one side and break 2 eggs on the other side of pan.

  • Scramble the eggs and add salt and combine with the veggies.
  • Now add the rice to the eggs n veggies. Make sure rice is not hot if using freshly cooked rice.

  • Toss the rice well with the eggs and veggies.
  • Sprinkle white pepper powder, add soy sauce and fry again well in high flame only.
  • Add the green part of spring onions. drizzle some sesame oil and turn off flame.

  • Adding veggies is optional and if adding , do not add too much as we are making egg fried rice and we need veggies just for a crunch.
  • You can add one more egg if you want for this quantity of rice.
  • Adding Sesame oil at the last step gives a nice flavor.
  • Can use leftover rice to make this delicious rice recipe.
  • If using freshly cooked rice, then cool it well before adding to the pan.
  • If you want it spicy then add a tsp of Chilli Sauce when sauting the veggies.
  • Serve with tomato sauce / Chilli Sauce or Manchurian Gravy !
