Veg Chow mein !

Vegetable Chow mein is Stir Fried Noodles with loads of veggies seasoned with Chinese flavorings like Sesame oil, Soy sauce etc. It is a classic Chinese dish and present on the Menu of all Chinese restaurants. Though there are many variations in this recipe from region to region I have tried my best to make it in the authentic Chinese way and not Indo-Chinese.

  • 100 gms dry Noodles
  • handful of chopped button mushrooms (I didnt have)
  • handful of bean sprouts
  • fistful of julienned carrots
  • fistful of sliced bell peppers
  • bunch of spring onions
  • Few broccoli florets
  • 2 - 3 tbsp sesame oil (or any oil)
  • salt as needed
  • 1/2 tsp white pepper powder / black pepper powder
  • 2 - 3 cloves Garlic
  • 1 tsp light soy sauce
  • 1/2 tsp Dark Soy sauce


  •  Cook the noodles as per packet instructions in boiling water.
  • Drain the water and add some oil to the noodles and mix well. Keep aside

  •  Heat oil in a pan (any oil) and saute crushed garlic and until it sweats. Add juliened carrots and saute for a minute . Then add all other veggies except bean sprouts and Spring Onion Green part and saute them all together.

  • Once the veggies are more than half cooked, add the bean sprouts and cook for 2 - 3 minutes.
  • Then add the noodles and stir fry everything well in oil for another 2 - 3 minutes.

  •  Once the noodles are well coated in oil and fried well, add salt and white pepper powder.
  • Mix well and then add light soy sauce first.

  •  Then add dark soy sauce and mix well so that the noodles is coated well in the sauce.
  • Lastly add the green part of spring onion, give a nice stir in high heat and not to forget this final touch.. sprinkle some sesame oil (sesame oil only) and toss everything well together once and turn off stove.


  • The initial oil can be anything, vegetable oil or olive oil but the final seasoning is to be done only with sesame oil which adds great flavor to the dish.
  • Do not skip the soy sauce as it is the critical ingredient in chowmein.
  • Use veggies as per your choice, I didn't have mushrooms, You can add them and also feel free to include savoy cabbage or Bok choy.
  • Make it more healthy by increasing the quantity of veggies and sprouts when compared to the noodle quantity.
