Carrot Stir Fry !


Carrots being a healthy vegetable I always stock them up in fridge. I use it in a variety of ways and include them in upma,poha, pulaos and lots of other dishes. I make soup often and chutney with it. 
And rarely I make this way of poriyal / thoran /vepudu whatever u call it as Vj is not a big fan of it. We eat them with rice mostly and not with rotis. It goes well as a side dish with  most of the south indian main courses.


INGREDIENTS
  • 4 - 5 medium size carrots
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp Cumin seeds
  • 2 tsp Urad dal
  • 1 green chili
  • 2 dry red chilli
  • 1 small onion ( finely chopped)
  • 2 - 3 cloves garlic (finely chopped)
  • salt as needed
  • 1 tsp sambar powder (or chilli powder)
  • a pinch of turmeric powder
  • 2 tbsp grated coconut (fresh or dessicated)

STEPS
  • Peel, wash and chop the carrot to tiny pieces. 
  • Take it in a microwave safe bowl  and add water till the carrot is immersed, sprinkle some salt and microwave in high for 5 mins.


  •  In a kadai / pan, heat oi and add mustard seeds and channa dal. Once dal turns golden and mustard splutters add jeera, garlic, green chilli and broken red chilli.


  •  Add onions and saute well until translucent. Then add the microwaved carrots to it and stir in.


  •  Add required salt, turmeric, sambar powder (or chilli powder) , sprinkle some water and keep it closed for 4 - 5 minutes in mediium flame.
  • The carrot should be cooked completely and the  raw smell of sambar powder should fade.


  •  Add grated coconut , give a nice stir and turn off stove. 

 NOTES
  • I microwaved the carrot, you can also boil it in water for some time. This step is optional and I do this to reduce cooking time on stove top as it gets more than half cooked.
  • If you are not doing above step then just add raw carrot pieces ans saute well for 3 - 4 minutes and then you have to close n cook for a little long until it gets cooked soft.
  • Adding coconut is optional but it does enhances the taste. Use fresh coconut for best results.
