Bean and Cheese Quesadilla !

Here is the last recipe of this Mexican week special, Yummy Refried bean and Cheese Quesadillas !When you have refired beans (store bought or Homemade Beans) handy then this dish is ready n minutes.
Quesadillas are flour tortillas stuffed with cheese as main ingredient and other stuff like vegetables, meat or beans. I have posted few months back Cheesy Veg Quesadilla,, do check that out !

  • 2 Flour Tortillas
  • 1 cup Refried Beans
  • 3/4 cup Grated Cheese (Cheddar / Mozzarella)
  • 2 - 3 tbsp chopped onions (optional)
  • 1 tbsp chopped pickled Jalapeno (optional)

  • Grease some butter on a tawa / griddle and Cook the tortillas for 2 minutes each side on medium to low heat. 
  • Then generously spread the refried bean on it as shown.
  • Spread grated cheese on it and top with onions and jalapenos.

  •  Fold the tortilla into half and cook till the cheese melts and golden brown spots appear on the surface. 
  • Brush with more butter if you wish.
  • Carefully shift to a plate, cut and serve.


  • If you dont have access to tortillas , dont u worry.. just use the leftover chapatis :)
  • Tortillas are almost same as roti / chapati but made with plain flour (or sometimes whole wheat flour) and baking powder is added sometimes.
  • Onions and jalapenos are optional and you can even fill some tomato salsa for a tangy kick.
