Mini Chocolate Cake !




Finally.. there is a cake recipe in my blog.. Aahhh.. I couldnt believe myself. I am kind of zero when it comes to cakes. Can you believe its only my 3rd cake ever I baked. The first one was an utter diaster (Choco Tuti fruti cake) with hell lot of ingredients I wasted. The second one was a simple vanilla sponge cake.. It was pretty decent but somehow I wasn't happy with the result. 
And then I bookmarked a recipe that was actually a one minute microwave Red velvet mug cake. The very same day I tweaked it to chocolate cake, and it turned out awesome. So here I go with a perfect mini chocolate cake which was made by doubling the ingrediens that was called for in the one min microwave mug cake.
I will post that microwave mug cake recipe too soon.. That is perfect for instant cake cravings.
The mini spring form pan I bought yesterday is so so cute and I am already falling in love with it and it motivates me to try different cakes. Mini cake, less ingredients.. less calories.. less workout :)


INGREDIENTS
  • 1/2 cup Wheat Flour (Atta) ( Or Use Plain flour / Maida)
  • 1/2 tsp Baking Powder
  • 3 tbsp Cocoa Powder
  • 1/4 tsp Salt
  • 1/2 cup White Sugar
  • 1/2 cup Butter Spread (or use Plain Butter / Oil)
  • 2 Eggs
  • 1/4 cup milk (or Almond milk)
  • 1 tsp Vanilla Extract


STEPS
  • In a bowl, take flour, salt, baking powder and cocoa powder and sieve them all together for better mixing.

  • In another bowl, take the butter spread and sugar and beat together till creamy.
  • Then add egg one at a time and beat everything well together. Add vanilla essence and milk and mix well.


  • Now add the dry ingredients (sieved flour mixture) to the wet mixture and mix. Do cut and fold method and do not use beater now.
  • I was so carried away with the preparations that missed to take many pics. 
  • Grease / spray a 12.5 cms cake tin and pout this batter into it. Tap the tin once to remove any air holes.
  • Bake in the preheated oven at 200deg C for 35 to 40 minutes. Mine got done at 40 minutes exactly.
  • Insert a toothpick / skewer and it it comes out clean then it is done.
  • Remove the cake from the oven and let it cool completely. Then run a knife around the edges and just open the springform to release the cake, or if using a normal cake tin just invert the tin on a plate.


NOTES
  • Firstly, I am not a pro in baking cakes and it is only a few times I have tried cakes and still learning. So pro bakers pls excuse for any faults and do correct if i am wrong anywhere.
  • I tried using wholewheat flour, you can use Maida or plain flour too, or mix of wheat flour and maida.
  • Again,I tired using buttery spread (Flora Buttery) but use normal unsalted butter or even cooking oil.
  • Last time I baked the same recipe with just oil.
  • I do not remember where I found the recipe but it was actually given for one minute microwave mug cake. I doubled up the quantities to make a mini cake in oven.
  • I generally dislike frosting and enjoy the sponge cake as such. Do a chocolate ganache or simple buttercream frosting if you like.
  • You can also sprinkle some icing sugar on top of cake with the help of a sieve.
