Hummus Egg Salad Sandwich !




Hummus Egg Salad Sandwich is one amazing and yummy sandwich I have ever tried. The creamy hummus blends with the egg yolk and with the seasonings makes it a perfect filling breakfast sandwich. For people who are not a fan of boiled eggs, this version will change their whole view about boiled eggs.



INGREDIENTS (makes 2 sandwiches)
  • 3 - 4 tbsp plain hummus (or any flavored)
  • a pinch of chilli flakes
  • 2 tnsp finely chopped parsley
  • 2 hard boiled eggs
  • 1/2 onion finely chopped
  • 5 - 6 black olives (finely chopped)
  • salt as needed
  • 2 pinches black pepper powder
  • few drops of lemon juice
  • 1 tbsp Ev Olive oil
  • 3 - 4 slices of bread
STEPS
  • In a bowl, take hummus, add chilli flakes, pepper, finely chopped parsley, onions and olives and mix well.


  • Chop the boiled eggs into small chunks and add it to the hummus mixture. 
  • Drizze some olive oil and lemon juice, add little salt (as hummus and eggs already have salt) and mix well.
  • You can enjoy this salad as it is with some salad leaves added to it.


  •  Spread this salad generously on the bread slices, sprinkle some more chilli flakes and stack them.
  • Cut them into wedges and serve at room temp or cold.


NOTES
  • I have used three slices to make it a double decker sandwich. Use 4 slices to make 2 individual sandwiches.
  • Toast the bread to make it a crunchy sandwich.
  • Feel free to add cucumber slices or any salad leaves like rocket, watercress, kale or spinach.
  • I used plain white bread. Replace it with any wholemeal bread to make it more healthier.
  • Adding some greek yogurt to the salad and it binds it together well.
  • Enjoy the salad as it is with some salad leaves on top instead of making into sandwich.
