Avocado Egg Sandwich !


Sandwiches are always a best option when it comes for breakfast or when you want to pack something for a picnic. Boiled egg is a protein warehouse and this egg sandwich is one way to include protein in your diet. And best way to feed your kids with the goodness of avocado along with eggs. It is very simple and with just minimum ingredients a srcumptious meal is ready.


INGREDIENTS (makes 2 sandwiches)
  • 3 - 4 slices of bread
  • 2 hard boiled eggs
  • 1 large avocado
  • few onion slices
  • few tomato slices
  • salt as needed
  • pinch of black pepper powder
  • 2 tbsp mayo (optional)
  • a pinch of chilli flakes (optional
  • 1 tsp lime juice.
STEPS
  • Destone the avocado and peel the skin off. Chop them finely and mash them with the  back of fork.
  • Sprinkle some salt and pepper and a dash of lime juice.
  • Chop off the bread crust (optional) and slice the boiled egg into thin pieces.
  • Spread the avocado generously on two slices of bread.
  •  Squeeze some mayo on it and arrange the egg slices and top it with some sliced onions.
  • Sprinkle some pepper and salt again on the egg. Add some chilli flakes too if you wish.
  •  Arrange few tomato slices and then stack the bread as shown. 
  • Give a slight press on top so that they hold the stuffing together and then cut into wedges and serve.

NOTES
  • I have used three slices to make it a double decker sandwich. Use 4 slices to make 2 individual sandwiches.
  • Discard mayo if you dont like it.
  • Feel free to add cucumber slices or any salad leaves like rocket, watercress, kale or spinach.
  • I used plain white bread. Replace it with any wholemeal bread to make it more healthier.
  • Toast the bread to make it a more crunchier sandwich.
