Squash Spinach Stir Fry !



This dish happened as an accident one day as I was in a confusion what to make as side dish for rotis. I usually just make squash stir fry and when there was enough palak left and I wanted to use it when its fresh I married it with squash for a healthy subzi with rotis.You can also use potatoes in place of squash and make it like Aloo palak dry subzi. 
Squash has a nice sweetish taste and when it is combined with the Indian spices and the spinach it makes a very flavorful dish to go with both rice or rotis.

Butternut Squash
1 full medium size
Spinach / Palak
1 bunch
Lemon Juice
half a lemon

STEPS
  • Heat oil in a heavy bottomed vessel or kadai and once hot add the cumin seeds and asaoedita. 
  • Then add chopped onions and saute them well followed by Ginger Garlic Paste

  • Then throw in the finely chopped chillis and once the onions are well sauted add the chopped squash.
  • Keep stirring and fry them along with the flavours of onion and  chillis. 


  • Then add salt, chilli powder, turmeric etc and give a good mix. Add some water and close the vessel and let the squash cook for 5 - 6 minutes. 
  • By this time it would be 90 % cooked. Now its time to add the chopped spinach.


  • Keep the pan open and stir in the spinach and squash together until the spinach gets shrivelled and reduces in quantity.
  • Add the garam Masala and mix it well with the veggies.
  • Do not overcook the spinach.. it hardly takes 2 - 3 minutes. Hence we are adding it at last. 
  • Turn off stove and squeeze some lemon juice if desired. 



Serve hot with rice or roti.
