Murungai Keerai Poriyal / Drumstick leaves stirfry !





Another recipe with drumstick leaves in this green series is stir fry of it. It tastes very unique when it is sauted in oil along with all the spices and the final topping of coconut adds more flavour to the dish. It is rich in iron and my mom used to make twice or thrice a week as we had a drumstick tree in backyard.
Gone are those days and now i have to travel in two trains to get a bunch of drumstick leaves that is even not so fresh that i don't have to sit to separate the leaves. A gentle shake of the stems and all the leaves fall apart :(

Crushed Roasted Peanuts

STEPS
  • Heat a pan and add oil, once hot add urad dal.
  • When it turns golden brown add mustard seeds followed by cumin seeds.
  • Then add broken red chillis.
  • Add sliced onions and saute well.


  •  Add ginger garlic paste and saute for a minute. Then add washed drumstick leaves and saute them well .
  • They start shrinking in volume and then add salt and chilli powder.


  •  Mix well and let it cook on open till the raw smell fades and leaves are cooked. 
  • Add dessicated or fresh coconut and mix well.


  • Sprinkle some crushed roasted peanuts (optional) and mix well. Turn off stove.
  • You can also add some crushed raw garlic atlast for an awesome flavor.


  • you can use either coconut or crushed peanuts or both. 
  • Do not eat for dinner as its hard to digest and results in stomach troubles.
