Couscous Veg Upma !

I like cooking fusion dishes.. and this is one among them.. Couscous being a salad ingredient when given this south India tadka avatar it is definitely outstanding. The best part is it doesn't need cooking time like rava too. Just add the couscous to boiling water and it is ready in 10 minutes.

  • 1 cup couscous
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp Cumin seeds
  • a pinch of asafoedita
  • 2 tsp channa dal
  • a sprig curry leaves
  • 2 red dry chillis
  • 2 green chillis
  • 1 tsp Ginger Garlic paste / chopped ginger
  • 1 small onion
  • 1 carrot finely chopped
  • 1 small potato
  • a fistful fresh / frozen green peas
  • 1/2 green bell pepper (or any color)
  • few broccoli florets
  • salt as needed
  • fistful chopped fresh coriander
  • 1/2 a lemon

  • Heat oil in a pan and add the channa dal and fry it.
  • When it turns golden brown add mustard seeds , hing and dry chillis.

  •  Then add cumin seeds, green chillis, Ginger garlic paste , onion and saute them all together.
  • When onions are sauted weell, add potatoes and carrot and saute them. (If needed cover the pan and cook the veggies). Add some salt for the veggies.
  • When they are almost cooked, add peas, broccoli and green bell pepper. 
  • Saute them for 3 - 4 minutes and let them cook as well.
  • Add water (for1 part couscous : 1.5 parts water) and salt , fresh chopped coriander and let the water come to a boil.

  •  When water is boiling well, add the couscous and give a mix.
  • Turn off stove and cover the pan tight without letting the steam escape. 
  • After 10 minutes all the water would be absorbed by couscous and your fusion upma is ready to serve.

It can be eaten as such, or with raita / yogurt.
