Corn Couscous flavored with Mint and Orange !

It was one nice sunny afternoon where I was bored of eating rice and looking for something simple to cook as I had to cook only for me and mom. Then decided to make couscous with corn and when i saw some mint and orange lying in fridge , got an idea of giving some orange and mint flavor to it.
It was indeed very flavorful and filling recipe and a very good alternative to rice.


  • 1 cup couscous
  • 3/4 cup sweet corn
  • 1 tsp salt
  • 1 tsp paprika
  • 1 ripe orange
  • 10 mint leaves
  • few broccoli florets (optional)
  • 1 medium onion
  • 1/2 tsp chilli flakes
  • 2 cloves garlic
  • crushed black pepper
  • a pinch of dried mixed herbs (oregano. parsley etc)
  • 1 tbsp olive oil / butter


  • In a bowl take a cup of couscous and add salt and paprika. 
  • Squeeze 3/4th of orange in the couscous reserving the remaining for later use.

  • Add 1.5 cups of super hot water to the couscous and give a mix.

  • Add some torn mint leaves to the couscous.
  • close the bowl and let it rest for 10 minutes until the couscous absorbs all the water.
  • After 10 minutes fluff the couscous with a fork and you can already smell nice  minty orangy couscous.

  • In a pan, add butter or olive oil and once hot add the finely chopped garlic and sliced onion.
  • Saute for 2 minutes and add the chilli flakes.
  • Throw in the broccoli and saute it along with the onions.

  • Then add the sweetcorn to the onions and saute for another minute.
  • I already boiled the sweetcorn in microwave for 4 - 5 minutes. Or can boil it in hot water too. 
  • Add salt and pepper to the corn and mix well.
  • Then add the fluffed couscous to the corn and mix well. 
  • finally squeeze the remaining orange and add fresh mint leaves and give a mix.

A healthy and flavorful meal is ready in minutes.
