Sun-dried Tomato Pesto Pasta !



Hello Lovely People,

Its been ages I posted a recipe though I have been clicking pics of some awesome non vegetarian dishes back home at moms place. I do not cook much non veg here and I utilised my vacation to India to blog as much non veg recipes I could. I will post them slowly as I got to edit the pics and write down the steps.

So today's dish is a very simple and delicious sun dried tomato pesto pasta. Generally this pesto has sundried tomato, basil and pine nuts as its key ingredients. But I don't want the basil to overpower the awesome taste of the dried tomatoes soaked in olive oil. So I skipped the basil and kept it simple yet delectable.


INGREDIENTS

  • 75 gms pasta (fusili or any pasta of your choice)
  • 100 gms sun dried tomato (reserved in olive oil)
  • 2 - 3 tbsp pine nuts
  • salt as needed
  • a pinch of black pepper
  • 1 big garlic clove
  • few broccoli florets (blanched)
  • some diced green and black olives
  • chopped parsley to garnish

STEPS


  • Boil the pasta as per package instructions until al-dente.
  • Discard the water and keep it ready.
  • Blanch the broccoli in hot water or microwave them for 2 - 3 minutes.
  • Roast the pine nuts for 2 minutes to bring the flavors out.
  • Grind together the sun dried tomato , roasted pine nuts, garlic and the olive oil in which the tomatoes were preserved. If not add olive oil additionally.


  • Add salt and pepper and little water if required and make it to a nice paste.
  • Your sun dried tomato pesto is ready. 
  • You can also add few basil leaves if you like the flavor.


  • Now take the boiled pasta in a bowl, add the pesto and give a nice mix.
  • Add the broccoli and the olives and toss everything well. Add a dash of olive oil if needed.
  • If you feel its too dry, then add some pasta boiled water.


Transfer to a serving bowl and sprinkle some parsley and parmesan cheese (if needed) and serve.
