Nutella Flower Brioche !





Nutella Flower Brioche is one amazing, super easy and spectacular bread,  It tastes awesome with the chocolaty Nutella and no words to express the looks. I would say it is definitey a showstopper and you can amaze your family and friends with this quick and easy bread that can be even served as dessert with a touch of icing sugar on it.
Brioche is a type of bread or pastry of French origin and it is made in the same way as a bread but enriched with butter and eggs. (source :wiki)
I wanted to try this since a long time and finally nailed it today. As i have made the pizza dough a number of times for pizzas, garlic bread etc it was so easy for me to make this. Just make the dough - rest - cut - apply nutella - layer it - shape it - bake it - and ENJOY ! And don't forget the self pat :) :)



 INGREDIENTS




  • 2 cups Plain flour / Maida
  • 1 tsp Salt
  • 2 eggs
  • 3/4 cup lukewarm milk
  • 3 tbsp sugar
  • 1 tbsp active dry yeast
  • a small cube of butter ( approx 2 - 3 tbsp)
  • 200 gms Nutella (or any other chocolate based spread)

STEPS
  • Take the lukewarm milk in a bowl and add sugar and yeast to it.


  • Mix well and let it rest for 10 - 15 minutes to prove. 
  • After 10 - 15 mins the yeast will activated and the milk turns foamy. 
  • Now, take the flour in a bowl and add salt to it.



  • Make a dent in the flour and break the eggs into it. Reserve some egg white for later use.
  • Add the melted butter and also the yeast mixture to it.



  • Mix well and make a dough (like a pizza dough or chapati dough)
  • Knead the dough well on a counter top for a solid 10 minutes if you want a soft and fluffy bread. 



  • After kneading well apply oil on the surface of the dough and let it rest in a oil greased bowl for 1 - 2 hours in a warm place.
  • I let my dough rest for 90 mts and it had doubled well in size.



  • Punch the dough back and knead for another couple of minutes and then divide into four equal parts.



  • Roll into a rough flat circle and then cut it to a perfect circle with the help of a plate/cake tin.
  • Do not waste the excess dough that is cut off from the sides. you can use it at the end wisely.



  • Repeat the same process with the other three dough balls and you will now have four neat circles.
  • Place wax paper or aluminium foil on a baking tray and place one circle on it.
  • Slightly melt your nutella so that it is easy to spread.


  • With a butter knife apply nutella generously on the dough circle. This is the first layer.
  • Then place another layer of dough on it carefully.



  • Again apply nutella and place the third layer. Repeat the process and finally place the last layer of dough.



  • Place a round cookie cutter or glass and mark a circle at the center.
  • Now with the help of a knife cut the dough into 8 parts as shown leaving the center part intact.



  1. Now again cut each part into two so that your have 16 parts that actually makes the petals of the flower.
  2. Carefully hold two petals one in each hand and twist them twice, The petal / part that you are holding in your right hand has to be twisted clockwise and the one on left hand to be twisted anticlockwise.
  3. Do the same and you will see the flower forming well.


  • Then pinch the edges to form a proper petal.I refered this VIDEO to make the petals. But later felt that I didn't make them so perfectly.. my be next time I will :)
  • Use the reserved egg white and brush the brioche well and let it rest for 10 - 15 minutes for a second rise. 
  • Meanwhile preheat your oven to 180 deg C and then place your brioche and bake it for 20 - 25 minutes. 
  • Your kitchen will be smelling like a bakery in 15 minutes. :)
  • Keep an eye on it after 18 minutes as the time depends on the oven.Mine got cooked well and browned well in 22 minutes.





USE YOUR LEFTOVER DOUGH

  • I got a ball of dough which was cut off from each circle. I didnt want to waste it.
  • So roll it into a circle again and cut into quadrants.
  • Apply Nutella on one quadrant well as shown



  • Place another quarter pice of rolled dough on it and apply nutella again. 
  • Repeat the process until you form four layers.



  • Now leave an inch at the edge and cut into four pieces as shown
  • twist and roll them like before and you can form two petals with the leftover dough.
  • Do the egg wash and bake it in the same way as before.

  2. Hi Shrutee.. Thanks for stopping by. You can use 1 tbsp of flaxseed pwder + 3 tbsp water for one egg. Also for brushing the brioche at the last step you can replace the egg white with milk

  3. Great thanks for that...also instead of Nutella can it be filled by chocolate ganache??? - Just a thought
