Some regular readers of my blog would have known well about my love for pasta and other Italian dishes too. But off late i have been consuming too much of butter , cream and cheese and i decided to make some healthy dish with pasta.
This pasta salad would have been more healthier with whole wheat pasta which unfortunately was out of stock in my pantry and i went ahead with normal pasta.
I should really mention that it was too much filling and couldn't finish a bowl..I personally liked the sweetness of pineapple and creamy avocado when really bored with the cucumbers and broccoli.
INGREDIENTS
- 70 gms pasta (preferbaly fusili / penne / macaroni)
- Few sliced English Cucumber
- fistful of chopped red and green bell peppers
- few broccoli florets ( blanched)
- one onion sliced
- few lettuce leaves
- 7 to 8 baby tomatoes halved
- half avocado chopped
- 8 to 10 green grapes halved
- 2 tbsp pomegranate seeds
- 2 pineapple rings (chopped)
- half a lemon
- 1 tsp crushed black pepper
- 1/2 tsp salt
- 1 tsp dried oregano (and other herbs if needed)
- a pinch of chilli flakes (optional)
- 2 tbsp extra virgin Olive oil
STEPS
- Boil the pasta in enough water with salt until al-dente.
- In a big bowl, take the boiled pasta and then throw in the peppers, onion, cucumbers and blanched broccoli.
- Sprinkle some salt and add crushed black pepper and toss well.
- Season with the dried herbs (oregano and other herbs like thyme/parsley/ rosemary).
- Squeeze in the lemon juice and also add fresh chopped parsley if u like ( I didnt have parsley)
- Now its time to add all the fruits... Throw in the baby tomatoes, grapes, pomegranate seeds and pineapples and toss well.
- Finally tear some lettuce leaves and add them to the salad.
- Drizzle the extra virgin olive oil and give a nice mix. SERVE..
- How nice it is to have a dish with very minimum cooking and with all fresh and healthy ingredients.!!
