Creamy Vermicelli Payasam ! / Semiya Payasam !



Vermicelli or Semiya Payasam is a dessert made especially on festive occasions. It is very quick to make and taste yummy too with just three ingredients milk sugar and vermicelli. Flavour it with greem cardamom or even rose essence and top with some dry fruits.

STEPS
  • I n a heavy bottomed vessel, heat a tsp of ghee. Once hot add the cashew nuts and fry till they turn golden brown.
  • Then add the raisins and almonds and fry till the raisins puff up.
  • Transfer to a plate and keep aside until needed.


  • In the same vessel, add the vermicelli and roast it until it is roasted well but not burnt. A few browning of vermicelli sticks here and there is absolutely fine. 
  • Once roasted transfer to a plate and heat 3 cups of water in the same vessel.

  • Once water comes to a nice boil, add the vermicelli to the water and let it cook. 
  • When it is almost cooked, add 2 cups of hot milk to it (use whole milk).
  • Let the vermicelli cook in the milk for 2 - 3 minutes.

  • Then add 3/4 cup sugar (or more if you want) and give a nice mix. The sugar melts and let the payasam simmer for another 3 - 4 minutes. 
  • Then add crushed cardamom (or cardamom powder) and give a stir.
  • Throw in the fried nuts to the payasam.


  • Add 3 - 4 tbsp of cream to the payasam and stir well. Turn off stove.
  • Payasam thickens soon with time. So turn off stove when it is thinner than the consistency you desire.
  • Adding cream is purely optional and the payasam taste great even without cream. But cream gives a nice creamy texture and a different taste too. 


Serve hot or chilled with Medu vada / Masala Vada ! Perfect combo ! :)
If it thickens too much then not to worry, just add some hot milk and mix well.
