Fusili in Cilantro Cashew Pesto !

Hello All,
A very happy new year to everyone. I know im very late and didnt post anything for a couple of weeks. Hope to post more interesting and tasty recipes this year.


75 gms whole wheat Fusili (or any pasta of your choice)
lot of water to boil pasta
1 tbsp salt

2 handful fresh Cilantro
1 tbsp Pine nuts
12 whole Cashew nuts
3 Garlic Cloves
1/2 Lemon
2 tbsp Extra Virgin Olive oil
a pinch of salt

1 tsp crushed pepper
2 tbsp grated Parmesan (or Pecorino Romano)


  • Heat a pan and dry roast the garlic followed by pine nuts and cashew nuts.

  • Boil the pasta  in salted water as per package instructions until al dente.

  • Grind the pine nuts, cashews along with the cilantro and garlic. Then add the oil, cheese, salt and pepper and make into a smooth paste. 
  • Squeeze in the lemon juice and give a run.

  • The pesto is ready and it can be used to toss the pasta, use as a dip or spread for breads or sandwiches.
  • Now add the pesto as much as you want to the boiled pasta and mix well. you can slightly warm the pesto in a pan with some butter too and then toss the pasta in it.

Sprinkle some grated parmesan while serving. !
