Crustless Vegetable Quiche !


Hello All,

I know its quite a long time i posted something.. i had a bad hard disk crash and i didnt have a laptop for 2 weeks.. felt handicapped actually without my lappy. Technology and gadgets have become basic necessity after food, water and shelter :)

So after all those sad and painful part of recovering the old data from the crashed disk and replacing new one etc something thats exciting is the pics i clicked with my new DSLR.. :)

I am still novice and just trying to learn food photography... so professionals pls excuse.. 

Ok.. Coming to the recipe.. Its Quiche.. first French recipe in the blog.. Quiche (pronounced keech) is a pastry crust with a savoury filling usually meat, seafood or vegetables with custard and topped up with cheese and baked. 

Sometimes quiche is made without the pastry/pie crust too.. And thats what i did.. no pie crust and i used mixed vegetables for the filling. May be sometime later i will try the pie crust too. 



INGREDIENTS


  • 1 tbsp olive oil
  • 1 small onion sliced
  • 2 cloves garlic
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • a fistful frozen/fresh green peas
  • a fistful frozen/fresh sweet corn
  • 10 broccoli florets
  • 2 pieces of butternut squash cubed
  • salt as needed
  • 1 tbsp crushed black pepper
  • 4 eggs
  • 3/4 cup milk
  • 1/4 fresh cream
  • 1 tsp dried herbs (oregano, thyme) 
  • 100 gms cheddar cheee (or mozarella)
  • 1 to 2 tbsp parmesan cheese 



STEPS


  • Heat a pan and add olive oil to it. 
  • THen add chopped garlic and once it sweats add the onion and saute.




  • Then add the squash and saute for 2 minutes. Add the remaining vegetables except peas and corn and give a nice saute. Add salt and pepper and mix well.



  • In a bowl break the eggs and add the milk and cream to it. 
  • Mix it well using a fork /beater.
  • Add a tbp of grated parmesan and mix well 
  • Cream is optional and can use only milk too.
  • Preheat oven to 200 degree Celsius. 




  • After mixing well, add the dried herbs and pepper and give a mix.
  • Grease a cake tin or round roasting tray with butter. 



  • Spread the vegetable mixture on the tray and pour the custard (egg n milk mixture) over it.
  • Now add the peas and corn to it. Just throw them in here and there.



  • Grate some cheddar cheese and parmesan.
  • Spread them on the mixture as shown.
  • You can also mix the cheese with the custard. But i like it this way



  • Place the tray in the 200C pre-heated oven and bake for 20 - 25 minutes. A nice aroma wafts after 15 minutes.
  •  And the time depends on different oven models.. so keep an eye after 15 minutes and make sure it is not burnt. Check with a knife inserted in the centre and it should come out clean if the quiche s done.
  • Here it is after baking..







Slice it and serve with mayo or can be eaten as such. Generally served with soup and salad.
