Linguine al pesto di Avocado ! (Linguine Pasta in Pesto with Avocado)



Linguine al pesto di Avocado is Linguine pasta in basic pesto sauce along with avocado. 
Linguine is similar to Spaghetti pasta, thin long but elliptical instead of flat or round. Linguine generally goes well with Pesto sauce.
Pesto is a sauce originated in Northen iItalyand the mandatory ingredients that go in are Basil leaves, Pine nuts, Olive oil and Parmesan Cheese. Variations to this basic sauce is done by adding avocados, cream, or spinach. I have seen many blogs mentioning pesto sauce without basil and those basic ingredients. Not sure if they can be called pesto.. only an Italian can justify :)

I personally feel pesto sauce is too strong though it is rich and flavorful. So i added avocados today and avocados give a nice creamy texture to the basic pesto making it yummier. 
The pesto absolutely needs no cooking and the boiled pasta can directly be tossed in it and served. Though i warmed it a bit with butter and then tossed the pasta in it.


INGREDIENTS

75 gms linguine (or any pasta of your choice)
lot of water to boil pasta
1 tbsp salt

1 handful fresh Basil leaves
1 Ripe Avocado
2 tbsp Pine nuts (Roasted)
1 Garlic Clove
3 tbsp grated Parmesan (or Pecorino Romano)
1/2 Lemon
3 tbsp Extra Virgin Olive oil
a pinch of salt
1 tsp crushed pepper


STEPS
  • Boil pasta as per packet instructions with salt until al-dente.
  • Slightly roast the pine nuts in medium flame for 3 - 4 minutes.
  • While pasta is boiling, prepare the pesto sauce.

  • In a food processor or mixer, add the basil leaves, garlic, pine nuts, salt and give a run. Then add the chopped/scooped avocados, lemon juice and olive oil and blend well until it becomes a smooth paste.
  • Finally add the grated cheese and pepper and give a run to mix well.

  • In  a pan add a tsp of butter and once melted add the pesto and warm it a little.. Do not overcook it. Turn off the stove.
  • Drain the pasta and add it to the pesto, you can add little pasta boiled water if you feel the sauce is too thick.
  • Mix well until the sauce is well coated on the pasta.



  • Transfer to a plate / bowl and sprinkle some cheese on it and serve. 
  • You can also drizzle some olive oil and sprinkle some pepper.
  • Can also add some cooked zucchini/ broccoli or pan seared chicken breast pieces.
