STEPS
  • Wash the eggplant (Baingan) well and dry it with a tissue paper/towel.Prick some holes/slots with a knife or fork and apply oil on the surface of it.
  • Traditionally the eggplant is roasted on flame directly. But i have cooked it in microwave high for 5 minutes. You can also roast it in the oven.


  • Heat a pan and add 2 tbsp of oil followed by Jeera and hing.
  • Then add chopped ginger, garlic and green chillis and saute for few seconds.
  • Add finely chopped onion and saute.



  • Once the onion becomes slightly brown add the chopped tomatoes and cook for 2 - 3 minutes. 
  • Then add chilli ppowder, coriander powder turmeric, salt and garam masala and cook till oil separates.


  • Add the finely chopped bell peppers. It is optional to add them. I like peppers so i add them in most of the dishes. 
  • Meanwhile peel the skin of eggplant and mash it well or chop finely.


  • Add the eggplant mash and mix well.
  • Add some water and cover n cook for 4 - 5 minutes.
  • Turn off stove when it reaches your desired consistency.


  • Squeeze lemon juice and serve with roti / naan
