Peanut Rice !

A delicious rice for all peanut lovers.. simple and quick lunch box dish and moreover can be made with leftover rice too !

STEPS

  • Roast the peanuts, deskin them and grind them coarsely.
  • Heat a pan and dry roast the urad dal and channa dal first followed by dry chillis, coriander seeds and pepper. Lastly add sesame seeds and coconut. Do not brown it too much.
  • Let the roasted ingredients cool for sometime and then grind them to a powder.
  • The reason im not grinding peanuts and this mixture together is roasted peanuts will get powdered soon if i ground together. Hence i made it to a coarse powder separately.

  • Now heat a pan and add oil , mustard and urad dal/channa dal.. Once they are brown, add jeera, broken red chillis (not in pic) and curry leaves. (I didnt have curry leaves). then add a pinch of turmeric and turn off the stove. 
  • Mix both the powders with the rice and mix well. I already added salt to the rice when cooking it. IF not add it now.
  • You can also add some whole or halved peanuts (or cashewnuts) to the rice for a crunchy texture. Now add the mixed rice to the pan and mix well  so that the turmeric s coated well. Add a tbsp of ghee and mix well. 
  • Garnish with Coriander leaves.
