Vegetable Dum Biriyani !

Vegetable Dum Biriyani is a rich rice delicacy with a combination of colorful veges and spices. It is the vegetarians delight and makes a sure presence in parties. It is prepared in many ways... in cooker.. just as an one pot meal with all veges and rice cooked together .. or rice and veges cooked separately and let it sit in dum for some minutes where the rice absorbs the vegetable flavors. 
Today it is veg dum biriyani.. and i will post the other ways too soon.
I just made this with the vegetables i had at home without any prior plan.  I made this for my special friend Nan during her stay with me and thanks to her for clicking some lovely pics patiently from the beginning to end.

Brown Onions
Thinly Sliced onions deep fried in oil

STEPS
  • Take all the shown whole spices and make it to a coarse powder. You can also add some big cardamom, mace and stone flower if available.



  • Chop all vegetables of your choice. Cauliflower, green peas and paneer can be added and they give nice flavor and taste. I didn't have them when i made :(
  • Slice one medium size onion , green chillis, chop mint leaves and keep other things like curd, lemon, above ground spice powder ready.


  • Slice thinly two medium sized onions and brown them. You can either deep fry them in oil, shallow fry them in a pan or brown it in an oven. I shallow fried it with little oil.


  • Soak Basmati rice for minimum 30 minutes and max 1 hour
  • Take some whole spices again to cook the rice.
  • For layering (third pic) saffron in milk, brown onions , mint and julienned ginger are to be kept ready




  • Take a heavy bottomed vessel / handi or stockpot and add some ghee / oil and then add the sliced onions and fry them.
  • Once they turn translucent, add the chopped potatoes first and saute for few minutes



  • Then add beans and carrot and saute for them another 2 - 3 minutes. 
  • Add ginger garlic paste, corn and green chillis.  Mix well and close and cook for 5 minutes.
  • Then add the capsicum, broccoli and mint leaves. The vegetables are added in order based on their cooking time.



  • Once all the veges are half cooked, add the spice powders, salt and mix well.
  • Add some water and let them cooked with the vessel closed.



  • Meanwhile boil lot of water in a big vessel and add the whole spices to it.
  • Add 1 tbsp of oil to it and when the water comes to boil add the soaked rice and needed salt.



  • When the vegetables are cooked 90 -95% add the cup of yogurt. 
  • Check the rice , it should be only 85 - 90% cooked. Fliter it in a colander and keep aside.


  • Now take out half of the cooked veges, and spread half of the rice on it.


  • Spread some mint leaves, ginger , brown onions and ghee on it.
  • Add the remaining vegetables and spread them as a nice layer.
  • Now spread the remaining rice evenly.

  • Now add the left out mint leaves, ginger, brown onions and ghee.
  • Sprinkle the saffron milk (or use yellow food color).
  • You can also sprinkle some rose water.



  • I added butter as i didnt have ghee.. :)
  • Close the lid with a cloth below it and let it be on the stove for 20 - 25 minutes in the lowest heat possible. If you are not able to adjust to very low.. after 10 minutes place an iron tawa on the stove and keep this vessel on that.


  • After 25 minutes, your kitchen is filled with a nice aroma for sure when you open the lid. 
  • Squeeze lemon juice on it.
  • Do not overmix the biriyani.. Take the rice along with the vegetable layers and serve.
  • Garnish with brown onions and coriander leaves and serve with raita.

Cheese Corn Balls !


Cheese corn balls is a wonderful starter made with minimal ingredients and also makes a nice evening snack with a cup of tea or for kids after school.




INGREDIENTS

STEPS

  • Boil the corn in hot water or microwave for 4 - 5 minutes.
  • Boil potato, peel and mash it well
  • Grate the cheese. I used cheddar cheese. You can use mozarella too.
  • Finely chop ginger, green chillis and coriander.
  • Run the boiled corn in a blender/mixer for just once or twice. Use the pulse option. Dont make a paste.
  • Now combine all the ingredients with 2 tbsp of corn flour and salt and mix well.
  • Dont add water.. the mixture will be a little sticky due to cheese.. Wet you hands and make equal golf size balls.




  • Spread some corn flour in a plate and roll the balls in it so that they are coated well in the flour.


  • Take 1 tbsp of maida and 1 tbsp of corn flour and add little water to make a batter (not too thick or thin). the batter should coat the balls.
  • Dip the ball in the batter and then roll them in the bread crumbs one by one and keep aside.
  • You can do till this step and keep in fridge for a day too.. and just before serving you can fry them in oil.



  • Heat oil in a kadai and fry the balls in batches until golden brown. Drain them on a paper towel.


Serve with tomato sauce / chutney / mayo or anything of your choice.

Simple Pancake !


Pancakes are thin, flat and round cakes but cooked on a hot surface and a raising agent (baking powder) is added. Pancakes are known all over the world in different names, we call it dosa, the French call it crepe while the British call it pancakes.
It goes well for breakfast and can be prepared with very minimal ingredients.




INGREDIENTS

Maida (All Purpose Flour) 1 cup
Egg 1 No
Baking Powder 1 Tblsp
Salt a pinch
Sugar 2 tblsp
Butter 1 tblsp
Milk 1 cup
Honey or Yogurt For Topping
Fruits Your choice

STEPS

  • We will mix all the wet ingredients together and then add the dry ingredients in it.
  • Break the egg and beat it well. Then add the sugar to it and mix well. 



  • Add milk to it and again beat well. The more you beat the more fluffier your pancakes will be.



  • Mix salt, baking powder to the all purpose flour well. You may also sieve everything together.  
  • Also a pinch of nutmeg powder and vanilla essence can be added to the batter. 
  • Now mix the dry ingredients to the wet mixture and mix well without any lumps.




  • Heat a pan/griddle and grease with some butter. Reduce the heat to the minimum and then pour a ladle full of batter. 
  • Do not spread at all.. The batter will automatically spread to a nice circle if the heat is low. If the pan is very hot do not expect a round pancake.
  • There should be lot of bubbles appearing on the surface which means the batter is incorporated with air well and you will get fluffy pancakes.
  • Flip them and cook on the other side for few seconds.
  • Use the same ladle and pour just one full ladle for each pancake so that you get all pancakes of same size.


Stack them and top with fruits of your choice.


Spread some honey or pancake syrup / Maple Syrup. Can also be eaten with Greek Yogurt or butter.
