Kashmiri Pulao !


Hello All,

I prepared this Kashmiri sweet pulao last sunday for lunch and it is actually one good way to finish up the fruits :P  I didn't gave much of colorful fruits except pomegrante seeds. I used Apples, Pineapples and Pear along with Pome seeds and Dry fruits. I really missed some green and black grapes and coriander too. 

It is a simple and quick pulao and a treat for people who love fruits and like to eat sweet rice. It can be eaten as such or with any mild paneer dish. 
Along with fruits you can also add sweet corn and some paneer cubes to the pulao.

STEPS
  • Heat a pan, add oil and ghee and fry the cashews and raisins. Keep them aside. Add finely chopped pineapple, apple and pear and saute or a couple of minutes. Do not over cook them. Transfer to a plate and keep them aside.

  • Add some more oil/ghee to the pan and add Cloves, Cinnamon, Cardamom and StarAnise. Saute till nice aroma comes and the cardamom breaks. Add the ginger juliennes and saute it for few seconds. Add the soaked basmati rice. I use 1 :1.5 (rice :water) ratio. So i added one portion of milk and half portion of water. Add salt to it. Cover and let it cook.
  • As i prepared in less quantity i prepared the pulao in the frying pan itself. You can use cooker, casserole or any heavy bottomed dish. Also instead of milk , coconut milk or orange juice can be used. Do not mix orange juice and milk. Last time when i prepared i used orange juice to cook the rice. It gave a nice fruity flavor.



  • Once the rice is cooked, add the sauted fruits, pome seeds, cashew and raisins and give a stir gently without breaking the rice. Add a pinch of pepper powder and garam masala powder and mix well carefully. You can also ad chaat masala if u like the flavor.


  •  Add a tblsp of ghee, mix well and transfer to serving bowl. Garnish with deep fried onions and coriander leaves and some ginger Juliennes.
