Chilli Paneer !

Hi All,

This is my first starter recipe for the blog and my first recipe with paneer in this space. Paneer being a very important ingredient for vegetarians makes a sure presence in every party or wedding menu. 

Chilli paneer can made both dry or gravy. It is fusion of Indian and chinese with Chinese seasonings adapted to indian tastes. Chilli paneer dry is mostly served as a starter.. deep fried paneer combined with bell peppers... tangy and sweet sauces makes a delicious snack for people of all ages.


For the marinade
Cottage Cheese (Paneer)
250 gms
Plain Flour
2 tbsp
Corn Flour
Sola Maavu
1 tbsp
Red Chilli Powder
Milagai Podi
Kaara Podi
1/2 tsp
Pepper Powder
Milagu thool
Miriyalu Podi
1/2 tsp
Ginger Garlic Paste
Inji Poondu Vizhuthu
Allam Velluli Paste
1 tblsp
a pinch
as needed
2 tblsp
Cumin Seeds
1 tsp
Green Chilli
Pachai Milagai
3 Nos
6 Cloves (Big variety)
1 piece Julieened
1 No
Kudai Milagai
simla mirch
1 Big or Mix of diff colors
Chilli Powder
Milagai Podi
Kaara Podi
1 tsp
Pepper Powder
Milagu thool
Miriyalu Podi
1/2 tsp
As Needed
Tomato Sauce
1 tbsp
Chillli Sauce
1 tsp
Soya Sauce
1 tbsp
Spring Onions
To Garnish
Lemon Juice
Elumichai Saru
Nimmakaya Saaru
Half Lemon (Optional)
  • Cut the paneer (Indian Cottage Cheese) into one inch cubes.
  • Cube the onions and bell peppers. Slice the green chillies, chop the garlic to thin round slices and julienne the ginger.

  • In a bowl, add maida (all purpose flour), corn flour, ginger garlic paste, pepper powder, chilli powder and salt as needed. Add little water and make a thick batter. The batter should not be very thin else it wont coat the paneer. Mix the paneer cubes in the batter and let it marinate for 15 - 20 minutes.

  • Generally the battered paneer cubes are deep fried in oil for this recipe. But a little calorie conscious i tried shallow frying them in pan. :) . It tastes good either ways.
  • Heat a pan and add a tbsp of oil and spread it all over the pan. Place the battered paneer cubes on the pan without touching each other. Do not add more and crowd the pan. You can fry them in batches. Turn the paneer on all sides and see that its cooked and browned evenly. Transfer to plate and keep it aside.

  • In the same pan. add a tbsp oil and add jeera. Then add the garlic and green chillis. ( you can also add lower part of spring onions  at this point) . Then add the onions and saute for a minute. Now add the bell peppers and saute them.

  • Lower the flame and add salt, pepper, chilli powder, tomato sauce, chilli sauce, soya sauce and mix well. Do not overcook the peppers. Maintain the crunchiness. Add the fried paneer cubes and mix well so that the sauces are coated well. Increase the flame and and saute for a minute and turn off the flame. Squeeze some lemon juice if desired. Chilli paneer is ready to serve.

Transfer to a serving plate and serve hot with any sauce of your choice or can be eaten as such. Garnish with coriander leaves / spring onions leaf part / ginger juliennes.

Pasta in White Sauce !

Hi Guyzz,

I am meeting you today with a mouth watering and delicious recipe.. Pasta in White Sauce. White sauce is actually called ALFREDO sauce.. invented by Alfredo Di Lelio and his signature dish Fettuccine Alfredo named after him. 

The actual recipe is very  simple with just three awesome ingredients which makes the dish heavenly.. BUTTER.. CREAM... PARMESAN. These three makes the original alfredo sauce and the cooked pasta is tossed in it. But it is highly calorific and the sauce is being modified variantly across many countries.

As a low calorie alternative to the original alfredo sauce , milk + flour is used in place of the cream. I have used both milk+flour and also a little cream instead of using only cream for the recipe. 

As a substitute for Parmesan, cheddar cheese or shredded Mozzarella cheese can be used. But parmesan tastes definitely unique.
I will post the original Fettucine Alfredo recipe soon :)

150 gms pasta (any shape)
2 tbsp butter
1 tbsp all purpose flour (Maida)
1 cup milk
1/2 cup Double Cream(Optional)
2 tbsp grated parmesan cheese
a pinch of Dried herbs (Italian Seasoning)
Chilli Flakes (optional)
Crushed pepper

Optional Vegetables
10 Broccoli Florets
3 Mushrooms (Medium sized)
few chopped red bell peppers
2 tblsp sweet corn.

  • Boil the pasta in salted boiling water with a tsp of oil so that they don't stick. Stir in between until it is cooked al-dente (cooked firm).
  • Mix 1 tbsp of maida (all purpose flour ) and little milk and keep ready.
  • (The actual recipe calls for sauteing the flour in butter and then adding milk slowly with continuous stirring. But this process is very much tricky and mostly forms lumps of flour. Hence to make it easy mix the maida with little milk before adding to the hot pan)

  • Adding vegetables to this dish is purely optional as just the pasta with this sauce tastes delicious. But no harm in adding a few colorful veges.. if not for the vegetables just the sweetcorn and mushroom blend well with the white sauce. 
  • I microwaved the corn and broccoli until they are cooked. You can cook them in boiling water too.
  • Heat a pan and add a tsp of butter. Add the roughly chopped mushrooms and saute till they leave water. Add the red bell peppers, and saute for another minute. Now add the cooked broccoli and corn. Sprinkle some salt and toss for a minute.Transfer to a plate and keep aside.

  • In the same pan, add more butter and once it melts pour in the flour-milk mixture and stir well. Keep the flame very low as it will thicken very soon and tend to form lumps. 
  • Add the remaining milk and  keep stirring..the flour gets cooked and the sauce thickens.

  • Add chilli flakes(optional) and crushed pepper to the sauce and mix well. Now add the cream and mix well. (The more cream you add the more it is tasty.. creamy .... and yummy,., :) 

  • Add the grated parmesan cheese and stir in till the cheese melts and a nice aroma wafts. Then add the cooked pasta and the veges and mix well

  • Cook for a minute or two on low flame and then add a pinch of dried herbs. Mix well and switch off the flame. 
  • (If you feel the sauce is thinner then cook for another couple of minutes. In the pic you can see more sauce in the pan and the pasta swimming in the sauce. I personally like more sauce and slurping it with spoon.. Some people keep the sauce less and just coat the pasta with sauce. It is upto you! )

  • Transfer to a serving bowl and sprinkle some grated Parmesan.. it indeed smells divine. I ate the whole bowl myself.. :P

Corn Pulao !

Hope all are doing good. I made this corn pulao recently for lunch box and clickd pics in a hurry  in the morning.. But turned out very delicious with the sweetness of corn and flavor of coconut milk and blend of spices. I added carrot as i needed some other vegetable too instead of just corn. You can also add beans or potato.

Broccoli Cheese Sandwich !

Hi There,

This simple broccoli sandwich is perfect for a busy morning breakfast. Packed with full of nutrients and a filling recipe that can be prepared in minutes with minimal ingredients. Broccoli and cheddar go well with each other and even broccoli haters will love this. Its perfect for kids as an evening snack too.


2 Slice Bread (Any thing will do, white, brown or seeded)
20 Broccoli Florets
1 Tblsp Corn Kernels (Optional)
2 tblsp grated Cheddar Cheese.
Salt as Needed
A pinch of crushed Pepper
Tomato Sauce (Optional)
1 tblsp Butter


I toasted the bread in a toaster once before making sandwich , you can just toast it with little butter on a tawa.
I microwaved corn for 4 - 5 minutes. You can just boil it in hot water too. 

  • Heat a pan, add half tbsp of butter  and add the broccoli florets and saute for 4 - 5 minutes till they are cooked but still crunchy. Do not overcook them. Add the cooked corn to it.

  • Add salt and crushed pepper to it. 
  • On the toasted bread, arrange the broccoli corn mixture evenly and spread the grated cheese on it. Optionally you can also sprinkle some tomato sauce on it. 

  • Place the other bread slice on top and with a help of a small plate give a tight press. Make sure the broccoli mixture does not come out.

  • Now add the remaining butter in the pan and place the sandwich carefully on the pan and toast well so that the bread is browned and turn crispier on the outside and the cheese melts on the inside. Flip the sandwich and keep for  minute so that the other side too turns crispy. 

Transfer to plate and cut them diagonally. Serve with your favorite sauce.

Kashmiri Pulao !

Hello All,

I prepared this Kashmiri sweet pulao last sunday for lunch and it is actually one good way to finish up the fruits :P  I didn't gave much of colorful fruits except pomegrante seeds. I used Apples, Pineapples and Pear along with Pome seeds and Dry fruits. I really missed some green and black grapes and coriander too. 

It is a simple and quick pulao and a treat for people who love fruits and like to eat sweet rice. It can be eaten as such or with any mild paneer dish. 
Along with fruits you can also add sweet corn and some paneer cubes to the pulao.

Kadai Chicken


Hope everyone is doing good. After my first sweet post i wanted to post something spicy and hence this Kadai Chicken post. I know my pictures are not that great which i manage to click with my old mobile phone . :(

Kadai Chicken is a very spicy and non gravy dish which gets its rich flavor with the blend of capsicums. It is basically a one pot dish and sauteing the capsicums is optional. I used tri color bell peppers for a attractive color combo.

Fruit Kesari

Hello All,

 I am here with my very first post. I was waiting for a good occasion to start my blogging.. and today being Varalakshmi Vratam I prepared Kesari, Medu vada, Puliogare and Channa Sundal. And secondly my little one turned 9 months old today. So why not have a sweet start.. 

I always wanted to try this fruit kesari with fresh fruits rather adding store bought essence. I  had only pineapple, apple and pomegranate. You can also add other fruits like papaya, orange and pear or any of your favorite fruits as long as they don't make the kesari gooey.
